(LOOKS ARE EVERYTHING)/TROPICAL SMOOTHIE
(with coconut from Resaca Beach)
My parents just returned home from an adventure in Culebra, Puerto Rico; I had the pleasure of dining with them in Boston before their drive home, and they gave me something special - freshly harvested coconut meat! Henry is something of an expert in palm-climbing and machete-wielding, both of which are required skills for self-sufficiency, at least in some climates. And so, I embraced the fruits of his labor and concocted an island-inspired blend, allowing only ingredients that would contribute to a perfectly tropically-colored smoothie.
Combine in blender:
- 1/3 cantaloupe, cubed
- 1/2 c fresh coconut meat
- 1 inch peeled turmeric root
- 1 frozen banana
- 6 oz plain yogurt
Blend until smooth, adding coconut milk or water to thin slightly if needed. A semi-effective cure for vacation-envy.
